  • 1 litre full-fat milk
  • 1/4 cup basmati rice, soaked
  • 1/3 cup Nutty Best California Almonds, slivered
  • 1/4 cup Nutty Best African Cashews, roughly broken
  • A pinch of saffron + 4 green cardamom pods
  • 4 tbsp sugar (or to taste)

Method

  1. Simmer milk with cardamom until reduced by a third, stirring often.
  2. Add soaked rice; cook on low heat 15 minutes until soft and creamy.
  3. Stir in sugar and saffron; simmer 2 minutes more.
  4. Top with cashews and almonds just before serving.
Allergy swap: leave out cashews and double the almonds, or vice versa — the texture holds either way.

Ingredients (Serves 3)

  • 1.5 cups basmati rice, soaked 20 min
  • 3 tbsp ghee
  • 1 tsp fennel seeds, 1 bay leaf, 2 cloves
  • 1/4 cup Nutty Best Sangli Yellow Raisins
  • 1 onion, thinly sliced
  • Salt to taste

Method

  1. Heat ghee, temper fennel, bay leaf and cloves for 30 seconds.
  2. Add onion; cook until golden. Add raisins, sauté 1 minute till they plump up.
  3. Add drained rice, 2.5 cups water and salt; bring to a boil.
  4. Cover and cook on low heat 15 minutes. Rest 5 minutes before fluffing.
Packs well cold — a favourite for school and office tiffins.

  • 1 cup Nutty Best UAE Medjool Dates, pitted
  • 1 cup Nutty Best California Almonds
  • 2 tbsp desiccated coconut (+ extra for rolling)
  • 1/4 tsp cardamom powder
  • Pinch of sea salt

Method

  1. Pulse almonds in a food processor to a coarse meal.
  2. Add dates, coconut, cardamom and salt; pulse until it forms a sticky dough.
  3. Roll into 12 small balls, then roll in extra desiccated coconut.
  4. Chill 20 minutes to firm up before packing.

Dried fruits like dates, raisins, figs and cranberries are naturally higher in sugar and are better suited to tiffin or post-workout recipes rather than strict keto meals.

Can I give tree nuts to my baby?

Finely ground or puréed tree nuts can be introduced from around 6-12 months in many cases, but every baby is different — always speak to your paediatrician before introducing nuts, watch for signs of allergic reaction on the first try, and avoid whole or roughly chopped nuts until your child can chew safely, generally after age 4.
